Italian restaurant etiquette

I learned many new things this trip, but one of the more interesting ones is proper etiquette in an Italian restaurant. The staff take pride in their work and expect you to show them respect for the process. You should know what you want to order before they come, rather than asking for more time. They also take it as a slight if you send anything back. Finally, they will wait for you to finish each course before bringing out the next. This contrasts from the American experience of increasing customer turnover rate through a more forward approach, and the American mindset that something is often wrong with their order.
